Deep fried chocolate wontons

These crunchy chocolate filled wontons are easily the most lovable dessert recipe.



Ready in less than 20 minutes,these wontons can increase the taste quotient of any dinner table.I first had them in a local chinese restaurant.Their taste made me crave for more and that led to making these wontons at home.I am sure this fast and fuss free recipe will win your hearts too.

Preparation time:5 minutes
Cooking time:10minutes
Yields:10 wontons

Ingredients:

  1. 1 cup crushed chocolate(I used Dairy milk)
  2. 10 wonton wrappers(eggless)/samosa wrappers
  3. Water for brushing wontons
  4. Icing sugar for dusting
  5. Vegetable oil for frying

RECIPE:

  1. Lay out five wonton wrappers on work surface at a time.Now place 1/2 tsp of chocolate in the centre of top half of each wonton,keeping chocolate about 1/2 inch from edge.
  2. Lightly brush all four edges of wrapper with water.Now lift up lower edge to touch top edge forming a triangle.Seal well removing all air from pocket.
  3. Take oil in a thick bottomed pan.Heat on medium flame.Carefully place five wontons one after another in oil.Fry till they are light golden brown.Take the wontons out of oil and on kitchen paper towels.Repeat this for remaining wontons.
  4. Sift icing sugar on wontons and serve with readymade chocolate syrup or with vanilla ice cream.

Stuffed Dough balls|How to make stuffed dough balls

These stuffed dough balls are inspired by dough balls made by the famous chef  RACHEL ALLEN.



These dough balls were initially made in my kitchen with left over pizza dough.But they are now appreciated so much by my family that I make pizza dough specially for these dough balls.


The famous Rachel Allens  non vegetarian dough balls inspired me to try and make some veg dough balls.And here is the result...soft and delicious lipsmacking doughballs.And guess what ,makking them is not tedious at all.


Preparation time:30 minutes
Cooking time:15 to 20 minutes
Resting time of dough:2.5 hours
Serves:5

Ingredients:
For pizza dough:

  1. 2 cups all purpose flour
  2. 1/2 tsp salt
  3. 2 tbsp Extra virgin olive oil
  4. Some more olive oil for greasing
  5. 2.5 tbsp active dry yeast
  6. 1 .5 tsp sugar
  7. 1 cup lukewarm water for kneading
For stuffing:
  1. 2 medium capsicum(grate and drain water)
  2. 2 medium onion(grate and drain water)
  3. 2 cups grated cheddar cheese(cheese block)
  4. 2 tsp crushed black pepper
  5. Salt as per taste
RECIPE:


  1. Mix yeast and sugar in a bowl with little luke warm water and keep aside to rest.Dont touch it for fifteen minutes.Keep it in a warm place to rise like near gas stove.
  2. Mix flour,olive oil,salt in a bowl.Pour yeast mixture to it.start kneading with luke warm water.
  3. Knead the dough with the help of dry flour for five to eight minutes on  kitchen counter.Stretch the dough and fold again for gluten to develop.This type of kneading will help us get soft and airy pizza or doughballs.
  4. Take a bowl.Grease it with olive oil.Place the dough in it and  cover it with dry towel. Keep it in warm area for two hours.Dough will double in size.
  5. After two hours knead the dough again so as to remove air bubbles.Place the dough in bowl.Cover it with towel and keep it again for second rising for half an hour.
  6. After half an hour dough is ready.Cut the dough into even sized balls.Flatten them a bit and keep aside.
  7. Take a bowl.Add capsicum,onion,cheese,salt and crushed black pepper in it and mix.
  8. Fill each flattened dough ball with 2 tbsp of mix and close it and roll it into a smooth ball.
  9. Place these stuffed dough balls on lightly greased baking tray.
  10. Preheat oven to 220 degree celsius.Place the baking tray on middle shelf and bake for around 15 to 20 minutes.After every 8 minutes change the sides of baking tray for even baking.Bake till the balls have puffed up and browned.
  11. Serve hot with regular butter/garlic butter  and mixed italian herbs.

Chilli cheese toast|How to make Chilli cheese toast

Chilli cheese toast echoes my anthem of LOW in effort and HIGH in taste.



This dish is an easy to serve breakfast or snack!I have used only green coloured pepper in it but red and yellow peppers can be used too.




It is just an assembling of a few ingredients usually available in our refrigerators.Yes it is that easy.

Preparation time:10 minutes
Cooking time:20 minutes
Serves :2

Ingredients:

  1. 4 white  bread slices
  2. 2 medium capsicum(finely chopped)
  3. 2 green chillies(finely chopped)
  4. 1 small onion(finely chopped)
  5. 1 tsp crushed black pepper
  6. 2 cups grated cheddar cheese(cheese block available in local markets)
  7. Salt as per taste
  8. Butter to apply on slices
RECIPE:

  1. Preheat oven to 200 degree celsius.Place 4 bread slices on baking tray and toast for 7 to 8 minutes till light brown.Instead of oven a toaster can also be used.Or simply toast the breads on a skillet on medium heat.
  2. Take a bowl.Mix capsicum,green chillies,black pepper,onion,cheese and salt in it.
  3.  Now butter all the toasted slices.Spread the mix evenly on these buttered toasts.
  4. Again bake in preheated oven for 7 to 8 minutes till cheese melts.If you are not using an oven,then place the toasts on skillet on medium heat and cover it with a big lid till cheese melts.
  5. Slice the bread diagonally and serve with tomato ketchup.

Lahsuni Aloo|Lasooni Aloo|Garlic potatoes

Lahsuni Aloo is a tangy dish of potatoes and garlic.



My four year old keeps eating this Aloo(potatoes) like biscuits since he loves them so much.


These are best served as snacks with a light sprinkle of Chaat masala.I am addicted to this dish and I am sure that after reading the easy recipe you will also fall for this dish.Happy reading and enjoy fuss free cooking!

Preparation time:18 minutes
Cooking time:10 minutes
Serves:5

Ingredients:


  1. 10 medium sized potatoes
  2. 5 cups water
  3. 18 to 20 cloves of garlic(finely chopped)
  4. 2 tsp kashmiri red chilli powder
  5. 1 tsp crushed black pepper
  6. 1 tsp dry mango powder
  7. 2 tsp lemon juice
  8. Salt as per taste
  9. 4 tbsp vegetable oil for cooking potatoes
  10. Coriander leaves and chaat masala for garnish
RECIPE:

  1. Wash potatoes and cut them in shape of wedges.DONOT REMOVE PEELS.Store them in a bowl of water to avoid discolouration.
  2. Take a pan and place the potato wedges with five cups water in it.Cover the pan and bring it to boil till potatoes are around 70% cooked/parboiled for approximately 1o to 12 minutes.Drain the wedges and keep aside.
  3. Take a thick bottomed pan.Put oil in it on medium heat.Add garlic to it and saute till it is golden brown in colour.
  4. Add potato wedges to this pan.Add red chilli powder,dry mango powder,Black pepper and lemon juice to the pan.Add salt and cover the pan.Let it cook on low heat for 5 minutes.
  5. After 5 minutes once the potatoes are perfectly cooked and crisp,take them off heat.Serve hot as snack or accompaniment.Enjoy!

Potato pancakes are associated with so many cuisines like Irish,Polish,German,Hungarian and many others.



These pancakes are HIGH in taste and LOW in effort!!



What more they can be easily made by leftover mashed potatoes of last night.



Preparation time:20 minutes
Cooking time:10 minutes
Yields:4-5 pancakes

Ingredients:

  1. 4 large potatoes
  2. 4 cups water
  3. 1 cup all purpose flour
  4. 1.5 cup milk
  5. 2 tbsp butter
  6. 1 tsp baking powder
  7. 1 tsp red chilli powder
  8. 1 tsp crushed black pepper
  9. Salt as per taste
  10. 2 tbsp vegetable oil per pancake
  11. Sour cream(1 cup low fat cream and 3 tbsp buttermilk mixed and chilled for 24 hours)
RECIPE:

  1. Take a pressure cooker.Boil potatoes in it with water till they are completely cooked( around 10 to 12 minutes).Take them off heat and let them cool.Now peel potatoes and mash them in a masher or grater so that no lumps are there.You should get fine paste of potatoes.
  2. Heat milk and butter in a pan on medium heat till the mix is lukewarm.
  3. Take a bowl.Sift flour and baking powder in it.Add potatoes to the bowl.Now add milk mix to the bowl and start whisking.Whisk for 3 to 5 minutes.Now add salt,red chilli powder,black pepper to the bowl and mix well.
  4. Take non stick frying pan.Put oil on it and heat on low heat.With the help of a large spoon,pour batter of pancake on it.Let it cook well on low heat till bubbles appear.Now cook on high heat till you get a golden brown crust.Now flip pancake and cook this side on low heat as well.Now take the pancake off heat.Repeat the procedure for remaining batter.Serve hot with sour cream or tomato ketchup.

Donuts|Eggless Donuts|How to make Eggless donuts

Crusty,puffy eggless donuts are great evening snacks!


My four year old loves to pick up a donut as a treat once he finishes his homework.And its divine taste is  a true reward for him.


You all can prepare them at home with this easy and addictive recipe.


Preparation time:25 minutes
Cooking time:12 minutes
Resting time:1.5 hours(for dough)
Yields:11 to 12 donuts

Ingredients:


  1. 2 cups all purpose flour and additional flour for dusting while rolling
  2. 3/4 cup milk
  3. 1/4 cup butter
  4. 1/2 cup castor sugar
  5. 2 tbsp dry active yeast
  6. 1 cup warm water for yeast
  7. 1 tsp sugar for yeast
  8. 1/2 tsp salt
  9. Vegetable oil for frying
For glazing:
Chocolate buttercream frosting
  1. 3 cups icing sugar
  2. 1 cup butter
  3. 1/2 cup cocoa powder
  4. 2 tsp vanilla essence
  5. 3 tbsp low fat cream
  6. 3 to 4 Tbsp of lukewarm milk till you get desired flowy consistency
For decorating:
Rainbow sprinkles/cake sprinkles/coloured gems

RECIPE:

  1. Add warm water and sugar to yeast and let it stand undisturbed for 10 to 15 minutes.
  2. Heat milk ,castor sugar and butter in a pan till its lukewarm.
  3. Take a bowl.Add flour,salt and yeast mix to it.Now slowly pour milk mix in the bowl and start whisking.
  4. Beat well everytime you add milk mix.After a while you will have to use your hands to start kneading the dough.Knead the dough well for 5 minutes till it is soft.
  5. Let this dough rest in a greased bowl for 1.5 hours.Cover the bowl with dry kitchen towel.
  6. The dough will rise after1.5 hours.Dust some flour on kitchen counter.Start rolling the dough till you get a sheet of 1" thickness.
  7. Cut this sheet with donut cutter or with two bottle caps till you get desired shape.
  8. Heat vegetable oil in a thick bottomed pan on medium heat.Start frying 2 to 3 donuts at a time in the oil.Donuts should be thoroughly cooked from inside too.Once they are golden brown in colour,take them out of pan and onto the absorbent paper.Fry all donuts in the same way.
  9. To make frosting,take a bowl.Beat butter and icing sugar together till mixed well.Add cocoa powder till its absorbed well.Now add vanilla essence,cream ,lukewarm milk till you get flowin g consistency.
  10. Now for glazing,dip cooled donuts in frosting and place them on wire rack for drying.Simultaneously spraed rainbow sprinkles on wet donuts so that they stick well.
  11. Serve the donuts hot.You can store unglazed donuts in fridge for 2 to 3 days.

Bharwan Shimla Mirch|Stuffed capsicum

A great tiffin box dish,this Stuffed capsicum recipe is amazingly simple and fuss free.





A perfect recipe for people facing time crunch but want to serve yummy tasting and spectacular looking dish.My four year old doesnt mind eating this veggie at any given time.Go ahead friends make it in your kitchen and get ready for some great compliments coming your way!!









Preparation time:30 minutes
Cooking time:25 minutes
Serves:3 to 4

Ingredients:

  1. 4 large capsicum/green bell peppers
  2. 4 medium sized potatoes(boiled,peeled and mashed)
  3. 1/4 cup grated cheese
  4. 1 medium onipon(chopped)
  5. 1/2 tsp cumin seeds
  6. 1/2 tsp garam masala
  7. 1/2 tsp red chilli powder
  8. 1/2 tsp turmeric powder
  9. 1/2 tsp dry mango powder/1 tsp lemon juice
  10. 1 tbsp vegetable oil for sauteing onions
  11. 3 tbsp vegetable oil for sauteing capsicum
  12. Salt as required
RECIPE:

  1. Slice off the tops of capsicum.scoop out the seeds.Now coat them with salt and keep aside for 10 minutes.After 10 minutes,wash thoroughly.
  2. Take a pan.Add vegetable oil to it .Saute onion in it till light brown.Add turmeric powder and red chilli powder and stir well.
  3. Add potatoes and cheese to this pan and mix everything well.
  4. Saute potatoes and cheese for 1 minute.Add garam masala,dry mango powder and salt to the mix.Mix well.Take it off heat and let it cool.
  5. With the help of a small spoon,stuff the capsicum with potato mixture.Repeat this for all capsicum.
  6. Take a non stick pan.Add vegetable oil to it.Place all four capsicum in the pan .Cover the pan and let this cook on low heat.
  7. After every 4 to 5 minutes,keep changing the sides of capsicum.It should cook on all sides,even on the open potato side.This takes around 20 to 25 minutes.
  8. Capsicum are ready once they are soft and wrinkled.
  9. Serve hot with Roti,Bread or as side dish.

Bhindi ka salan|Deep fried okra in coconut based gravy

Bhindi or Okra is an all time favourite in my house hold.I prepare it for main course in many forms.One of the way of preparing okra is this Bhindi ka salan.





This coconut based gravy can be used to prepare Mirchi ka salan too.The recipe is fast and amazingly tasty and can be prepared in gatherings at home.





I prepared this recipe for the first time around five years back.i saw it in a TV cookery show.I have modified the original recipe a bit.The result is still a crowd puller!



Preparation time:10 minutes
Cooking time:20 minutes
Serves:5

Ingredients:

  1. Okra /Bhindi 20 pieces
  2. 6 to 8 tbsp curd/yogurt
  3. 2 tbsp vegetable oil
  4. 1 tsp red chilli powder
  5. 2 tsp coriander powder
  6. 1 tsp turmeric powder
  7. 1 tsp cumin seeds
  8. 1/2 cup water
  9. Salt as per taste
  10. Vegetable oil for frying okra
For coconut paste
  1. 1/4 cup grated coconut
  2. 1/4 cup peanuts
  3. 1 medium onion(paste)
  4. 4 cloves garlic(paste0
  5. 1"ginger(paste)
  6. 3 green chillies
  7. 2 tsp white sesame seeds
  8. Water(as little as possible for grinding)
  9. 2 tbsp vegetable oil(for saute)

RECIPE:
  1. Wash okra in water and let them dry thoroughly.
  2. Now remove both ends of okra.If okra is too big then divide it into two.
  3. Take a thick bottomed pan.Heat vegetable oil at high temperature for frying okra.Deep fry okra in the oil till they become soft.Now remove okra from oil and place it on absorbent kitchen towels.
  4. Now take another pan.Add vegetable oil to it.Saute onion in it till brown.Add peanuts to it and roast them on medium heat till they are brown.Add coconut to it and saute till its slightly brown.Keep stirring to avoid burning.
  5. Add sesame seeds to this pan and roast them too.Add ginger garlic paste  and green chillies to the pan.Stir well.
  6. Let the mix cool.Now grind this mixture in grinder with water to get a fine paste.
  7. In the same pan,add vegetable oil.Once it is hot add cumin seeds and let them splutter.Add coconut paste and cook on medium heat till mixture leaves oil.
  8. Now add curd,red chilli powder,coriander powder.turmeric powder aand water to the pan.Cook for 5 minutes.Add salt and stir well.
  9. Add fried okra to the pan,stir well and cook for 5 minutes on low heat..
