Chai Spiced oats banana smoothie

Like most Indians, I am a chai fanatic. I try to add my chai spices and chai concoction into every possible dish around.




It really pleases me to get an absolutely innovative recipe with chai spices in it.




Here in Mumbai , its peak summer time. This cold, creamy and healthy smoothie satisfies the taste buds and refreshes one too.
Not just that, this smoothie is extremely easy and fast to prepare.

Whenever I feel like having a second breakfast ( yes i do that often, once at 6 am and second at 8am), I go for this smoothie.



Thankfully my hubby and Mr6 love this too so this gives one more reason to prepare it often.

Chai spiced oats banana smoothie

Prep time: 5 minutes
Cook time: 5 minutes
Yield: For 1
Ingredients
  • 1/4 cup
    Rolled oats
  • 1/2 cup
    water
  • 1/2 cup
    Chilled Milk
  • 1/2 cup
    Chilled curd/ yogurt
  • 3 tbsp/ or a sper taste
    honey
  • 1
    banana (frozen and diced)
  • Chai spices
  • 1/2 tsp
    cinnamon powder
  • 1/2 tsp
    nutmeg powder
  • 1/2 tsp
    cardamom powder
  • 1/2 tsp
    cloves powder
Cooking Directions
  1. Take a pan, add oats and water in it. Cook this for 2 minutes on medium heat and then take it off the heat.

  2. Take a blender. Add cooked oats, milk, curd, honey, banana and ground chai spices, Puree until smooth. Serve immediately.

Egg Wrap recipe | Egg wrap Indian style

Come Monday after a long festive weekend . Back to my clinic , sons school work , hubbys office routine  . sob...sob..
I just could not find anything to cheer three of us ...when suddenly a Magical breakfast stuck me.

EGG WRAPS !!!!




Easy peasy wraps !! Made in under 30 minutes.
And totally delish !



Even on a Monday !!! :D




These Egg wraps were something I always had in my Lunch box as  a kid . And so is the case with my son. Super popular in my household.
Mondays can be tough but something as cheery and beautiful as these Egg wraps can make Monday a Fun day !!





Egg wraps

Recipe by Shivani Saxena
Prep time: 10 minutes
Cook time: 10 minutes
Yield: 6 wraps


Ingredients
  • For tortillas
    Ingredients
  • 1 cup
    whole wheat flour
  • 1/2 cup
    all purpose flour
  • 2 tbsp
    vegetable oil
  • As required
    Water
  • For EGG FILLING 
  • 6
    Eggs ( ONE for each wrap )
  • As per taste
    Salt
  • As per taste
    Red chilli powder
  • As required
    Vegetable Oil
  • FOR SALAD 
  • 1
    Finely sliced carrot
  • 1
    Finely sliced onion
  • 1 cup
    Roughly chopped coriander leaves
Cooking Directions
  1. For making tortillas.
  2.  Take a bowl . Add whole wheat flour , all purpose flour , vegetable oil in it. Start adding water to it for kneading. Knead well till you get a soft dough.
  3.  Divide the dough into six equal balls. Flatten each ball into a thin tortilla of 4 - 5 " diameter with the help of rolling pin. 
  4. .Take a skillet. Place it on medium heat .Place a flattened tortilla on skillet and cook it on both sides by applying vegetable oil.
  5.  Repeat this for all tortillas.


  6. For making egg filling.

  7. .Take a frying pan. Apply vegetable oil on it. Take an egg and crack it open on the pan. Sprinkle salt and red chilli powder on it .

  8. .Flip the omlette and cook the other side.

  9.  Repeat this for all eggs.

  10. Now Assemble the wrap. Place a tortilla followed by ketchup and then Egg omlette . After this place the salad on it. Bring all this together and tie the wrap with the help of tooth pick. Cover it with a napkin and serve.

Nutella stuffed dumplings | Nutella gujiya

This recipe of Nutella ( OMG ) stuffed dumplings is actually a continuation of my last post about Gujiya.




This dish is a wonderful example of fusion of conventional Gujiya with Nutella.

Everything in the recipe remains the same except for the filling which is nutella in this case. Hubby dearest calls these dumplings as Nutella Gujiya ( lol ).




Easy and fuss free to make ! A quick sweet for shining and colourful festivals like Diwali ,Christmas ,Holi etc .






Nutella Stuffed Dumplings

Prep time: 35 minutes
Cook time: 15 minutes
Yields : 20 to 22 dumplings



Ingredients
For pastry dough
  • 2 cups All purpose flour
  • 1/2 cup Vegetable oil
  • pinch salt
  • As required Water
For filling 
      2 cups Nutella 
  • For frying Vegetable Oil


Cooking Directions
  1. To make pastry dough
  2. In a bowl , take all purpose flour , vegetable oil , salt. Start adding water to the flour but little at a time . We want a firm yet soft dough . Knead the dough well.

  3. Once the dough is ready , let it rest for 25 minutes by covering it with damp cloth . 

  1. Steps to make Dumplings
  2. Make small balls of dough and cover them with damp cloth . Take one ball at a time . With the help of rolling pin , roll it into a circle of approxi mately 4 " t 5 " diameter .
  3. Fill 1 tbsp Nutella inside the circle . Apply water on one half of the flattened ball and seal the sides properly.
  4. Fold into pleats by pressing and folding it . Seal it properly to avoid tearing of dumpling while frying . Place dumpling below damp cloth to avoid drying .
  5. Repeat the procedure and make remaining dumplings .
  6. Now take vegeatble oil in a thick bottomed pan .Place it on low flame .
  7. Place dumplings carefully in it . Add 2 -3 dumplings in hot oil at a time . Dont overcrowd the oil .
  8. Fry the dumplings till outer crust is golden and crisp .
  9. Take the dumpling out of oil and on absorbent paper . Once cold , dumplings can be stored in airtight container for approximately 1 week in refrigerator .

Diwali....the light , the sparkle , the crackers . Sit quietly . Close your eyes . Withdraw the senses . Fix the mind on illumination of soul  and enjoy the true essence of diwali !

This gorgeous festival of snacks , sweets , crackers and feast ,where old and young meet each other with delight . This Diwali , I am presenting you with a conventional Diwali sweet called Gujiya.



Gujiyas are known by several names in different parts of India . Like Ghughra in Gujarat , Karanji in Maharashtra , Karachika in Tamil Nadu , and so on.
Recipe is almost  similar for all with slight variation as per the region.









Mawa Gujiya | Sweet dumplings

Prep time: 35 minutes
Cook time: 15 minutes
Yields : 20 to 22 Gujiya



Ingredients
For pastry dough
  • 2 cups All purpose flour
  • 1/2 cup Vegetable oil
  • pinch salt
  • As required Water
For Filling
  • 2.5 cups Mawa / dried whole milk
  • 1 cup dessicated coconut powder
  • 1/2 cup sugar powdered sugar
  • 1/2 cup  chopped raisins and cashew nuts
  • 1/4 tsp cardamom powder

  • For frying Vegetable Oil


Cooking Directions
  1. To make pastry dough

  2. In a bowl , take all purpose flour , vegetable oil , salt. Start adding water to the flour but little at a time . We want a firm yet soft dough . Knead the dough well.

  3. Once the dough is ready , let it rest for 25 minutes by covering it with damp cloth . 


  4. To make filling

  5. In a thick bottomed pan , take dried whole milk ( mawa ) and cook for 3 to 5 minutes on medium flame till it changes colour to light brown.

  6. Take mawa off heat and let it cool completely.

  7. Add sugar , raisins and cahew nuts , dessicated coconut and cardamom powder to it . Mix well and your filling is ready .


  8. Steps to make Gujiya

  9. Make small balls of dough and cover them with damp cloth . Take one ball at a time . With the help of rolling pin , roll it into a circle of approxi mately 4 " t 5 " diameter .

  10. Fill 1 tbsp filling inside the circle . Apply water on one half of the flattened ball and seal the sides properly.

  11. Fold into pleats by pressing and folding it . Seal it properly to avoid tearing of Gujiya while frying . Place Gujiya below damp cloth toa void drying .

  12. Repeat the procedure and make remaining Gujiya .

  13. Now take vegeatble oil in athick bottomed pan .Place it on low flame .

  14. Place Gujiya carefully in it . Add 2 -3 Gujiya in hot oil at a time . Dont overcrowd the oil .

  15. Fry the Gujiya till outer crust is golden and crisp .

  16. Take the Gujiya out of oil and on absorbent paper . Once cold , Gujiya can be stored in airtight container for approximately 1 week.

Churro bites | Eggless Churro bites

I couldnt blog regularly since some time. Guilty !! Reasons being hectic schedule in my dental clinic and my son's studies. But come Karwa chauth and I couldn't stop myself from posting an easy and yummy Spanish snack ....Churro bites. How long can I stay away from my passion FOOD !! 



Yes Churro bites....a quick and different version from original  big spiral Churros. 
Try out this Spanish street food as a Diwali snack along with all traditional sweets. I am sure your family and friends will love it. 



Last week I had a kitty party at my place. I was with my friends and doing what I love the most....cooking. A happy meal experience that it was! All aligned towards friends and food. And no it was no hashtag foodgasm. It was a true foodgasm ...a soulful experience of eating with friends. This experience was taken to another level by this Spanish Tapas / snack served by me.
It was sweet yummy easy to make and fancy too.



So friends ...go ahead make these Churro bites this season and enjoy !





Churro bites | Eggless Churro bites

Prep time: 20 minutes
Cook time: 25 minutes
Yield: for 3 to 5 people
Ingredients

  • 1/2 cup
    Milk

  • 3 tbsp
    butter( salted )

  • 2 tsp
    sugar (regular table sugar in powder form )

  • 1/4 tsp
    salt

  • 1 tsp
    vanilla essence

  • 1 cup
    all purpose flour

  • As required
    Vegetable Oil ( for frying )

  • As required
    Powdered sugar for dusting

  • As required
    Cinnamon powder for dusting( optional )
Cooking Directions

  1. Take a thick bottomed pan. Add milk, butter sugar and salt to it. Place it on medium heat and bring it to boil. Once it reaches boil, take it off heat .Add vanilla eassence and all purpose flour to it. Keep mixing with a spatula till you get a s,mooth mixture with no lumps. Take vegetable oil in a thick bottomed pan.Let it heat on medium flame. Transfer all Churro batter in a piping bag with a large open star tip.


  2. Pipe 1 to 1.5" dough out over hot oil and using scissors ,cut the dough so as to drop over the ocil. Remember to make churros in small batches to avoid burning. Allow churros to fry until golden brown by stirring occassionally. Then take them out of oil and place on absorbent paper to drain excess oil. Do this for the entire churro batter. In a small mixing bowl,add cinnamon powder and sugar together and mix well. Coat churros with this mix. Serve warm .

Daal bati recipe|How to make daal bati

Food is fulfilment and nothing could be more fulfilling than something from your grandmas kitchen. This Daal Baati is a perfect example of nostalgic familial recipe.



Daal is a lentil curry with four types of lentils in it. While Baati is a baked wheat flour bread which is hard outside and soft inside.
Daal baati is happy food to me. While I was pregnant, I used to crave for it. That was when my beautiful grandmom taught me how to cook this perfectly. Till date daal baati increases my happiness quotient and lessens my stress level.



If you have stopped finding joy in your everyday food ,try this daal baati . Eating this dish with happy companions will surely bring back the charm to everyday food.

Daal baati is eaten in many states of India especially Rajasthan, Uttar pradesh and Madhya pradesh.
Baati is most popular in Rajasthan where it is cooked in traditional oven and eaten along with clarified butter as accompaniment. Yes clarified butter ( GHEE ) is a must have along with baati. It takes the taste of baati to another level.



I  am one of those foodies who try to make eating and cooking everyday food not only fuss free but also trendy.
So dig in this sumptuous daal baati and enjoy the flavours.





Daal Baati recipe

Prep time: 1 hour 30 minutes
Cook time: 45 minutes
Yield: 20 baatis
Ingredients


  • FOR BAATI

  • 4 cups
    whole wheat flour

  • 1 cup
    semolina

  • 1/2 cup
    clarified butter

  • 1 tsp
    baking powder

  • As per taste
    salt

  • 1 tsp
    carrom seeds

  • 3 cups
    boiling water ( for boiling raw baati )

  • As needed
    water (for kneading )


  • FOR DAAL

  • 1/2 cup
    tuar dal ( pigeon pea lentil )

  • 1/4 cup
    whole moong dal (whole green gram)

  • 1/4 cup
    chana dal( bengal gram lentil )

  • 1/4 cup
    moong split ( green gram split )

  • 1/2 cup
    clarified butter

  • 1 tsp
    turmeric powder

  • 1 tbsp
    red chilli powder

  • as per taste
    salt

  • 2 tbsp
    ginger garlic paste

  • 1 tsp
    asoefetida

  • 1 tsp
    carrom seeds

  • 1 tsp
    cumin seeds

  • as needed
    water
Cooking Directions
  1. For Baati ( Whole wheat bread )

  2.  In a bowl , add wheat flour, semolina , baking powder , salt, carrom seeds and cumin seeds. Add water little by little and make a firm dough but not very hard. Let it rest for 15 minutes.

  3. Divide the dough into 20 pieces. Shape each piece into a ball with a dent in middle (for easy cooking).

  4. Take a pot of water and let it boil well.. While its boiling, add these baatis (balls ) in the water (one by one ). All baatis will settle down in pot.

  5. After 15 minutes, once the baatis are cooked ,they will start floating on top of boiling water. Take baatis out of water on kitchen towel.

  6. Preheat oven to 180 degree celsius. Brush the baking tray with clarified butter. Arrange boiled baatis on baking tray. Apply clarified butter on each baati. Bake for 25 minutes on middle shelf .

  7. After 15 minutes,change the side of baking tray for uniform baking. baatis are ready once they are uniformly golden brown.

  1. FOR DAAL
  2. .Soak all lentils for 1 hour in water.

  3. .Take a pressure cooker. Add clarified butter in it on medium flame.Add carrom seeds, cumin seeds and asoefetida .Let them splutter.

  4. Now add ginger garlic paste to the cooker. Saute till raw smell of garlic goes away.

  5. .Add soaked lentils to the cooker. Mix well.

  6. .Add turmeric powder,red chilli powder and salt to the cooker and mix well.

  7. .Add 2 to 3 cups water to the cooker .Water should be double the amount of lentils.

  8. .Place the cooker cap with whistle on it. Let it cook on high heat till two whistles.After that cook on low heat till one more whistle.

  9. .Take it off heat and check . if the lentils are still hard, add water and allow few more whistleson high heat.

  10. Once ready serve daal with baati and clarified butter.

Plum lemon mocktail|Plum lemon fizzy mocktail

Mocktail. Mocktail. Mocktail. When its weekend I start craving for mocktails. The fresh colour, sweet and tangy taste, fizzy texture all this makes any fruit mocktail very desirable for most of us!!!



The elaborate act of making this plum lemon moctail from scratch works as a stress buster for me.
And yes its a great bonding activity with kids! Let them squeeze that lemon while you are cooking plums and Voila the mocktail  is ready in minutes.



This Plum lemon mocktail is also a great welcome drink in any party. Its also loved by kids . So what are we waiting for? Lets get cooking...


Preparation time: 10 minutes
Cooking time:20 minutes
Serves: 6

Ingredients:

For Plum syrup:

  1. 1 cup water
  2. 1 cup granulated sugar(table sugar)
  3. 2 cups pitted plums
For Plum lemon mocktail:
  1. 2 cups soda water
  2. 1/2 cup lemon juice
  3. Above mentioned plum syrup
  4. Crushed ice while serving
RECIPE:
  1. Take a pan. Add water, granulated sugar and plums to it. Let this cook on medium heat for 20 minutes till we get a thick plum syrup. Take it off heat and let it cool. Now strain the remnants of plum through a stariner. Keep this thick plum syrup for further cooling.
  2. Take a jug. Add plum syrup, lemon juice to it . And mix well.
  3. Now just before serving , add soda water. Serve chilled with crushed ice.

Rachel Khoos rigatoni pasta with mushrooms|Rigatoni pasta in Bechamel sauce

Why walk when you can dance.Right!likewise why have a simple pasta in Bechamel sauce .Make a beautiful garden of pasta,mushrooms,mixed herbs and chilli flakes.Yes..now have it!


Today I am super active,happy and enthusiastic.
I am doing something that is keeping me on my toes(well literally)
I am dancing today....as it is said dancing is like dreaming with your feet!!!




I am practising my Bharatnatyam dance moves(thanking my dance guru every minute).I have been learning dance since 8 years of age!
All the dance Mudras...Pataka ,tripataka ..make me feel as if I am floating and when I tap my feet on every taal,its like poetry of the foot.



The better,more amazing version of you cant happen if you stay where you are.
Dance is helping me meet my better version since childhood.
And now writing all about food is taking me one more step towards a better me.

Life is about taking chances,trying new things.Never be afraid to try something new,because life gets boring when you stay within the limits of what you already know.

With all these poetic and motivational thoughts I present you my idol Celebrity chef Rachel khoo(rachel khoo ) 's Rigatoni pasta with bechamel sauce.




As always this dish is quick to make,good to look and delicious to eat!

Preparation time:30 minutes
Cooking time:30 minutes
Serves:2

Ingredients:
For Bechamel Sauce:

  1. 1 cup butter
  2. 1 cup all purpose flour
  3. 2 cups lukewarm milk
  4. 1 cup lukewarm water
  5. 2 tsp crushed black pepper
  6. Salt as per taste
For pasta:
  1. 4 cups rigatoni pasta
  2. 2 cups button mushrooms(roasted in 1 tbsp Extra virgin olive oil)
  3. 2 tbsp extra virgin olive oil
  4. 1 pot full of boiling salted water
  5. 3 cups of grated cheddar cheese
  6. 1 tsp dried mixed italian herbs
  7. Chilli flakes to garnish
RECIPE:
  1. To make Bechamel sauce,melt butter in a large frying pan.Add all purpose flour to it and mix well till no lumps.
  2. Take the pan off heat,gradually add milk,whisking constantly.Now add water,whisking at the same time.
  3. Keep the pan back on medium heat,add salt and black pepper and let the sauce simmer on low heat for 10 minutes.Add milk if sauce is too thick.
  4. Put the pasta in boiling salted water and cook for 2 minutes or as per packet instructions.After 2 minutes,drain water and add cold water to the pasta to stop cooking process.Add extra virgin olive oil to the pasta and keep aside.
  5. Now add cheddar cheese in the bechamel sauce and stir well.
  6. Take 2 small pots as seen in the pictures,arrange the rigatoni pasta upright tightly in the pots.They will look like honey comb.
  7. Now pour sauce over the pasta.Tap the pots so that sauce can reach all nooks and corners.
  8. Decorate the pasta with mushrooms on top .Garnish with chilli flakes and serve hot.

Slow cooker red lentil curry|Red lentil,onion and pumpkin curry with potao served in samosa wraps|Masoor daal with onion and pumpkin

The idea of going back to your roots and doing what your mother or grandmother cooked is quite therapeutic!A traditional recipe cooked traditinally in a SLOW COOKER on low heat is what is this RED LENTIL CURRY all about.


I always talk about fuss free and quick food with available local ingredients.This is one example but exotic example of that.

My grandmother whenever she used to cook this Red lentil curry on a small stove top,I used to wait to eat it.
The aroma in the house,the eagerness on everybodys taste buds !!Oh so tantalizing!

Food is fulfilment and nothing could be more fulfilling than sonmething familial!



Cooking this in SLOW COOKER OF CROCKPOT makes it all the more tastier and rich!
Also it gives me time to watch my favourite TV show,bake cookies,get my sons homework done!!yayyyy!!

Lets not wait anymore and lets get down to work!

Preparation time:30 minutes
Cooking time(Crockpot Slow Cooker):5 to 6 hours
Yields:4

Ingredients:
For red lentil curry:

  1. 2 cups red lentil(Whole Masoor Dal)
  2. 2 tbsp Vegetable Oil
  3. 1 cup finely chopped onions
  4. 1 cup finely chopped tomatoes
  5. 1/2 cup finely chopped garlic
  6. 1 tsp ginger paste
  7. 1 cup diced pumpkin
  8. 4 to 6 cups water
  9. 2 tsp turmeric powder
  10. 4 tsp red chilli powder
  11. Salt as per taste
For potato in Samosa/wonton wraps
  1. 4 samosa/wonton wraps available in supermarket
  2. 2 cups boiled potatoes  mashed with 1 tsp red chilli powder and 1 tsp salt
  3. 4 tbsp vegetable oil for roasting the wraps
RECIPE:

  1. Take one samosa wrap at a time,lay it on c hopping board .Place 2 tsp potao mash on one half of wrap.Fold the other half of wrap to completely enclose the potato mash.Brush water on edges of wrap for it to stick.Refrigerate for 10 minutes make such 4 wraps.Roast them with vegetable oil in a frying pan till they have a crisp golden brown cover.
  2. Take a frying pan.Add vegetable oil to it on medium heat.Add onion ,garlic to it and saute till brown.
  3. Add tomatoes to the frying pan and saute them till they loose moisture and shrink.
  4. Add diced pumpkins and roast them for 2 minutes till they are brown and crisp.
  5. Take CROCKPOT slow cooker.Add washed red lentils and all the ingredients of frying pan to it.Add water to it.
  6. Add turmeric powder,red chilli powder and salt to the cooker.Cover it.Lentils should be cooked on low heat for 5 to 6 hours.Make sure lentils dont burn.Add water if needed.
  7. Serve hot red lentil curry with potato in samosa wrap!
