Chai Spiced oats banana smoothie

Like most Indians, I am a chai fanatic. I try to add my chai spices and chai concoction into every possible dish around.




It really pleases me to get an absolutely innovative recipe with chai spices in it.




Here in Mumbai , its peak summer time. This cold, creamy and healthy smoothie satisfies the taste buds and refreshes one too.
Not just that, this smoothie is extremely easy and fast to prepare.

Whenever I feel like having a second breakfast ( yes i do that often, once at 6 am and second at 8am), I go for this smoothie.



Thankfully my hubby and Mr6 love this too so this gives one more reason to prepare it often.

Chai spiced oats banana smoothie

Prep time: 5 minutes
Cook time: 5 minutes
Yield: For 1
Ingredients
  • 1/4 cup
    Rolled oats
  • 1/2 cup
    water
  • 1/2 cup
    Chilled Milk
  • 1/2 cup
    Chilled curd/ yogurt
  • 3 tbsp/ or a sper taste
    honey
  • 1
    banana (frozen and diced)
  • Chai spices
  • 1/2 tsp
    cinnamon powder
  • 1/2 tsp
    nutmeg powder
  • 1/2 tsp
    cardamom powder
  • 1/2 tsp
    cloves powder
Cooking Directions
  1. Take a pan, add oats and water in it. Cook this for 2 minutes on medium heat and then take it off the heat.

  2. Take a blender. Add cooked oats, milk, curd, honey, banana and ground chai spices, Puree until smooth. Serve immediately.

Egg Wrap recipe | Egg wrap Indian style

Come Monday after a long festive weekend . Back to my clinic , sons school work , hubbys office routine  . sob...sob..
I just could not find anything to cheer three of us ...when suddenly a Magical breakfast stuck me.

EGG WRAPS !!!!




Easy peasy wraps !! Made in under 30 minutes.
And totally delish !



Even on a Monday !!! :D




These Egg wraps were something I always had in my Lunch box as  a kid . And so is the case with my son. Super popular in my household.
Mondays can be tough but something as cheery and beautiful as these Egg wraps can make Monday a Fun day !!





Egg wraps

Recipe by Shivani Saxena
Prep time: 10 minutes
Cook time: 10 minutes
Yield: 6 wraps


Ingredients
  • For tortillas
    Ingredients
  • 1 cup
    whole wheat flour
  • 1/2 cup
    all purpose flour
  • 2 tbsp
    vegetable oil
  • As required
    Water
  • For EGG FILLING 
  • 6
    Eggs ( ONE for each wrap )
  • As per taste
    Salt
  • As per taste
    Red chilli powder
  • As required
    Vegetable Oil
  • FOR SALAD 
  • 1
    Finely sliced carrot
  • 1
    Finely sliced onion
  • 1 cup
    Roughly chopped coriander leaves
Cooking Directions
  1. For making tortillas.
  2.  Take a bowl . Add whole wheat flour , all purpose flour , vegetable oil in it. Start adding water to it for kneading. Knead well till you get a soft dough.
  3.  Divide the dough into six equal balls. Flatten each ball into a thin tortilla of 4 - 5 " diameter with the help of rolling pin. 
  4. .Take a skillet. Place it on medium heat .Place a flattened tortilla on skillet and cook it on both sides by applying vegetable oil.
  5.  Repeat this for all tortillas.


  6. For making egg filling.

  7. .Take a frying pan. Apply vegetable oil on it. Take an egg and crack it open on the pan. Sprinkle salt and red chilli powder on it .

  8. .Flip the omlette and cook the other side.

  9.  Repeat this for all eggs.

  10. Now Assemble the wrap. Place a tortilla followed by ketchup and then Egg omlette . After this place the salad on it. Bring all this together and tie the wrap with the help of tooth pick. Cover it with a napkin and serve.

Onion rings Indian style

Onion rings are a popular western snack.


The batter in western recipes is often made with flour and Beer.Here I am presenting Onion rings Indian style with no Beer and lots of red chilli powder.Hope these fuss free crispy onion rings will become a regular snack in your house too just like mine.


Preparation time:10 minutes
Cooking time:15 minutes
Serves:3

Ingredients:
  1. 3 -4 large onions
  2. Vegetable oil for deep frying
For batter
  1. 1 cup all purpose flour
  2. 3 tbsp corn flour
  3. 2 tsp red chilli powder
  4. 1 tbsp vegetable oil
  5. 1/2 tsp baking soda
  6. Water as required
  7. Salt as required

RECIPE:

  1. Cut the onion into circular slices and separate them into rings.
  2. In a large bowl,mix all purpose flour,corn flour,baking soda,red chilli powder,vegetable oil ,salt and water till you get a semi solid batter like consistency.Let this batter rest for 5 minutes for baking soda to act well.
  3. Take vegeatble oil in a thick bottomed pan.Heat it on high flame till its ready for frying.
  4. Dip each ring in batter and put in pan with oil.Fry these rings first on medium heat and then on high heat till rings get golden brown in colour.
  5. Remove onion rings from pan and serve hot with tea or as starter.

Deep fried chocolate wontons

These crunchy chocolate filled wontons are easily the most lovable dessert recipe.



Ready in less than 20 minutes,these wontons can increase the taste quotient of any dinner table.I first had them in a local chinese restaurant.Their taste made me crave for more and that led to making these wontons at home.I am sure this fast and fuss free recipe will win your hearts too.

Preparation time:5 minutes
Cooking time:10minutes
Yields:10 wontons

Ingredients:

  1. 1 cup crushed chocolate(I used Dairy milk)
  2. 10 wonton wrappers(eggless)/samosa wrappers
  3. Water for brushing wontons
  4. Icing sugar for dusting
  5. Vegetable oil for frying

RECIPE:

  1. Lay out five wonton wrappers on work surface at a time.Now place 1/2 tsp of chocolate in the centre of top half of each wonton,keeping chocolate about 1/2 inch from edge.
  2. Lightly brush all four edges of wrapper with water.Now lift up lower edge to touch top edge forming a triangle.Seal well removing all air from pocket.
  3. Take oil in a thick bottomed pan.Heat on medium flame.Carefully place five wontons one after another in oil.Fry till they are light golden brown.Take the wontons out of oil and on kitchen paper towels.Repeat this for remaining wontons.
  4. Sift icing sugar on wontons and serve with readymade chocolate syrup or with vanilla ice cream.

Lahsuni Aloo|Lasooni Aloo|Garlic potatoes

Lahsuni Aloo is a tangy dish of potatoes and garlic.



My four year old keeps eating this Aloo(potatoes) like biscuits since he loves them so much.


These are best served as snacks with a light sprinkle of Chaat masala.I am addicted to this dish and I am sure that after reading the easy recipe you will also fall for this dish.Happy reading and enjoy fuss free cooking!

Preparation time:18 minutes
Cooking time:10 minutes
Serves:5

Ingredients:


  1. 10 medium sized potatoes
  2. 5 cups water
  3. 18 to 20 cloves of garlic(finely chopped)
  4. 2 tsp kashmiri red chilli powder
  5. 1 tsp crushed black pepper
  6. 1 tsp dry mango powder
  7. 2 tsp lemon juice
  8. Salt as per taste
  9. 4 tbsp vegetable oil for cooking potatoes
  10. Coriander leaves and chaat masala for garnish
RECIPE:

  1. Wash potatoes and cut them in shape of wedges.DONOT REMOVE PEELS.Store them in a bowl of water to avoid discolouration.
  2. Take a pan and place the potato wedges with five cups water in it.Cover the pan and bring it to boil till potatoes are around 70% cooked/parboiled for approximately 1o to 12 minutes.Drain the wedges and keep aside.
  3. Take a thick bottomed pan.Put oil in it on medium heat.Add garlic to it and saute till it is golden brown in colour.
  4. Add potato wedges to this pan.Add red chilli powder,dry mango powder,Black pepper and lemon juice to the pan.Add salt and cover the pan.Let it cook on low heat for 5 minutes.
  5. After 5 minutes once the potatoes are perfectly cooked and crisp,take them off heat.Serve hot as snack or accompaniment.Enjoy!

Cupcake idlis|How to make Cupcake idlis

Cupcake Idlis are idlis with a difference!!!

These are conventional idlis presented in the most unconventional way....
I got this recipe from a food magazine.I have been making these idlis since 2013.I have also made some changes in the original recipe as per my experience.For example initially I used to grease tart moulds a nd pour the batter in it.But now I place silicon moulds inside tart moulds.This method gives much neater Idli cupcakes.
All said and done this recipe is loved by kids and adults alike.


Preparation time:10 minutes
Cooking time:15 minutes
Serves:2

Ingredients;

  1. 2 cups idli batter(1 tbsp vegetable oil and 1 tsp salt added to it)
  2. Coconut coriander chutney/dip
  3. 1 cup milk cream/hung curd(I have used cream)
  4. Chilli flakes for garnish
For coconut coriander chutney/dip:
  1. 3/4 cup grated coconut
  2. 1/4 cup coriander leaves
  3. 1 green chilli
  4. salt as per taste
  5. water(as little as possible)
RECIPE:

  1. Take an idli steamer with water.Keep only two tiers of idli mould in it.Dont place the upper two tiers.
  2. Take a tart mould.Place a silicon cupcake mould in it.Pour idli batter in it.
  3. Now place the tart moulds in the idli steamer and cover it.Let this cook for 10 to 15 minutes on high /medium heat.
  4. Preapare the coriander coconut chutney by grinding all ingredients together in a mixer.
  5. Now strain this chutney in a muslin cloth so as to remove all water from it.
  6. Add cream to this chutney and mix well.Add the mix in a piping bag.Pipe the chutney over idli or simple place the chutney on idli with spoon.
  7. Garnish with chilli flakes.Serve hot as starter or cold in kids tiffin box.Happy cooking!!!

Mexican Stuffed French Toast sandwiches recipe|How to make Mexican stuffed French Toast sandwiches

This Mexican stuffed french toast sandwich is nutricious,delicious and quick.

It can be conveniently called STAR amongst breakfast recipes....and at my place it is eaten as Breakfast,Lunch and Dinner(literally!).
So all you multitasking ladies,fresh cooks and teenagers who want to throw a party,this dish is a crowd pleaser.

Preparation time:10 minutes
Cooking time:10 minutes

For Stuffing:

  1. 3 tbsp vegetable oil
  2. 1 capsicum (choppped)
  3. 2 green chillies(finely chopped)
  4. 1 tomato(chopped)
  5. 1/2 cup boiled corn kernels
  6. 2 medium potatoes
  7. Salt as per taste
  8. black pepper crushed(as per taste)
Other Ingredients:
  1. 6 big white bread slices
  2. 2 tbsp milk
  3. 2 large eggs
  4. 2 tbsp butter
  5. 2 cups grated cheese(cheese block will  do)
RECIPE:
  1. Boil the potatoes and chop them roughly.Donot mash.
  2. Take a pan.Add oil to it.Add capsicum,tomatoes and green chillies to it.Saute it for 3 to 4 minutes.
  3. Add potatoes and corn kernels to the pan and saute for 2 more minutes.Take it off heat.
  4. In a small bowl,whisk egg and milk together.
  5. Now take a skillet over medium heat .Add butter to it.
  6. Now dip 2 slices of bread(both sides) into egg milk mix and place them onto buttered skillet.
  7. Cook for 3 to 4 minutes till light brown.Do this for both sides of breads.Place the stuffing and grated cheese onto first slice and cover it with second slice.
  8. Now cook for 2 to 3 minutes more till all cheese is melted.Remove from heat.
  9. Repeat and make two more sandwiches.Serve hot!

Hummus recipe|How to make Hummus

Hummus is a middle eastern chickpea based dip.It is now enjoyed worldwide.

Hummus is  a proof that best tastes dont need complicated techniques of cooking.It only needs a few ingredients a nd a mixer.What we usually do with chickpeas is make 
Punjabi Chole Masala or chana masala or chana pulao.But food blogging gives me the joy of trying out new dishes and then share that with world.


Hummus can do much more than just cling to a croot or cucumber stick.It can be added to salads,sandwiches,rolls,breads,crackers etc.What more .......it is so simple to make at home.It is only the sequence of ingredients that you have to take care of.


I was introduced to Hummus for the first time by a friend,an Australian resident,who was visiting India.She was praisin g this guilt free dip and I was staring hard at her.That was when she explained me all about it.I tasted it and was bowled over instantly.

Preparation Time:20 minutes
Cooking Time:10 minutes

Ingredients:
  1. 250 gm chickpeas
  2. 3-4 cups of water
  3. 2 garlic cloves(chopped)
  4. 1 cup chickpeas stock
  5. 2 tbsp thaini paste(sesame seeds paste)
  6. 3 tbsp lemon juice
  7. 1 tsp crushed sea salt
  8. 1 tsp cumin powder
  9. 1 tsp paprika powder
  10. 6 to 8 tbsp Extra Virgin Olive Oil
For granish(optional):Coriander or Parsley leaves

RECIPE:

  1. Take chickpeas in a pressure cooker.Add garlic and water to it.Let it cook on high heat for 15 to 20 minutes till chickpeas are toatlly soft.Now drain and cool them.
  2. Now take a mixer.Add tahini and lemon juice to it.Blend it well.
  3. Add remaining ingredients and blend them well for a while till you get an extra smooth Hummus.
  4. Hummus can be refrigerated for upto three days and kept in freezer for a month.Add olive oil whenever you want to use it.

Banana kiwi fruit smoothie

A health drink,energy booster,crowd pleaser and pleasant part of brunches and breakfast.....that is what smoothies are all about!


Simple is beautiful.And that is what I love about this drink.Just whiz everything together and voila!your smoothie is ready.



My son lend his hand (very enthusiastically) in making this drink.A time will come when I will have to officially hand over the charge of making smoothies for my entire family ,to my four year old.
Kids are often tired of eating fruits.Smoothies are the easiest way to let kids try different types of fruits/.
P.S: Adults,this is guilt free!

Cooking time:10 minutes

Ingredients:

  1. 2 ripe bananas(peeled  and chopped)
  2. 1 kiwifruit(peeled and cooked)
  3. 5 tbsp yogurt/dahi
  4. 2 tbsp milk
  5. Sugar(if you need it)
  6. Crushed ice(if you need it)

RECIPE:
  1. Take a pan,add kiwi fruit to it and let it simmer for  a minute till soft.I have included this step only as a precaution.Because if eaten raw ,kiwi can cause irritation in throats of some people.(you can totally avoid this step too).
  2. Now put all ingredients in blender .Process untill smooth.Pour in a glass and enjoy!

Vanilla Cupcake| Basic Cupcake recipe| How to make Cupcake recipes

Cupcakes are called so as they were made by measuring ingredients in a cup.



                                                                                                          
Cupcakes are smaller,miniature cakes,lighter in texture,sweeter,have frosting.There is always a confusion between cupcakes and muffins.


While Muffins are bigger,bread like,denser in texture,sweet or savoury,no frosting.








Preparation Time:10 minutes


Baking Time:12 to 15 minutes





Ingredients:


For cupcake:


  1. 200 gm all purpose flour(1.5 cups)
  2. 200 gm castor sugar
  3. 100 gm salted butter
  4. 2 eggs(beaten)
  5. 1 tsp vanilla essence
  6. 2 tbsp milk
  7. Cake decoration items like sprinkles,candies etc
For buttercream frosting:
  1. 75 gm butter
  2. 1 tsp vanilla essence
  3. 2 tsp milk
  4. 150 gm icing sugar
RECIPE:
  1. Take a bowl.Add butter,castor sugar and vanilla essence to it.Whisk them well till you get a smooth mixture.
  2. Add eggs and mix them well.The mix will curdle but that will be fine later.
  3. Now add half of the flour and half of the milk to mix.Whisk well.Add remaining flour and milk and whisk well.
  4. Preheat oven at 190degree celsius.
  5. Place silicon moulds in each of the depression  of a 12 cup muffin pan.
  6. Add the mix to each of the mould with the help of spoon.Fill the mould only half way because cupcake will increase in size.
  7. Keep the muffin tray on baking tray and place in oven for 12 to 15 minutes.
  8. Poke a toothpick in cake and it should come out clean.That means cupcakes are ready.Let the cupcakes cool on a rack for five minutes.
  9. For BUTTERCREAM  FROSTING,mix butter,icing sugar,vanilla essence  and milk together.
  10. Place frosting on each cupcake with the help of spoon.Sprinkle each cupcake with the chocolate sprinkles.
  11. Voila!!!Enjoy these cupcakes.

Biscuit Cake

I got this recipe for the first time from a friend who used to make it in a pressure cooker.


I tried making this cake myself with some variations and in microwave oven,and it turned out really well!My friend used to describe this cake as an emergency treat for all possible situations like guests arriving suddenly or kids winning a school competition.


This cake is made from biscuits or cookies.But if you think logically,you will realize that all biscuits are made of flour,sugar and some raising agent.So here we just add milk,some more baking powder and cook it.The result is a soft and delicious cake.




Preparation time:10 minutes
Cooking time:5 to 8 minutes(in  microwave oven)/20 minutes (in preheated convection)
Serves:2 to 4

Ingredients:

  1. 20 to 25 glucose biscuits (try parleG )
  2. 5 tsp cocoa powder
  3. 2 cups castor sugar
  4. 2 tbsp melted butter
  5. 3 cups milk or as required
  6. 2 tsp baking powder
  7. Icing sugar for dusting
  8. Butter and all purpose flour for dusting bowl or cake tin
RECIPE:
  1. Crush the biscuits in a bowl with hands or in a mixer till they are powdered.
  2. Add castor sugar,butter,milk,cocoa powder and baking powder to the biscuits.Mix well till you get a dropping semi solid consistency.
  3. Take a microwave safe bowl or a 6 "cake tin.Grease it well with butter and a little all purpose flour.Pour the mix in bowl.The bowl should be big enough so that cake batter doesnt exceed 3/4th of  bowl or cake tin.
  4. Microwave for 5 to 8 minutes or put in preheated oven(at 180 degree celsius) for 20 minutes.
  5. The cake is ready if on poking a toothpick in cake,tooth pick comes out clean.Remove the cake from oven.
  6. Let the cake cool on cooling rack.Dont try to invert the bowl.Otherwise the cake will break completely.I have gone through the trauma of breaking cake when I made it for the first time(in hurry of removing from bowl).
  7. Once the bowl is inverted and cake is out,dust it with icing sugar.Slice it and serve.Enjoy!!!

Fluffy pancakes

Fluffy pancakes can make an otherwise dull weekend verrry cheerful!What more.........It is a recipe which can be finished under thirty minutes.:)


Preparation Time:5 minutes
Cooking Time:20 minutes

Ingredients:

  1. 2 cups of all purpose flour
  2. 6 tbsp sugar(powdered)
  3. 1 tsp baking powder
  4. 1/2 tsp salt
  5. 2 eggs (beaten)
  6. 1 cup milk
  7. 2 tbsp butter(melted and cooled)
  8. Butter for frying
  9. Toppings such as plum,strawberry,sweetened whipped cream,honey,jam or chocolate syrup
RECIPE:

  1. Whisk butter and sugar in a bowl.Add eggs and milk to this mix.Your wet mix is ready.
  2. Now seive flour and baking powder to the wet mix.
  3. Heat butter in a non stick pan.Brush butter all over the pan.
  4. For each pancake,spoon 2 to 3 tbsp of batter onto pan.Using the back of the spoon, spread batter into a round shape.
  5. Cook until surface of pancakes have bubbles.Flip  carefully  with a flat spatula and cook this side till it is brown.Transfer the pancake on plate and serve with desired toppings.Continue making more pancakes with the remaining batter.
  6. I have served the pancake here with honey,plum and my sons favourite Berry jam.
